Cooking Dungeness Crab
24 February 2009
The steps to cooking dungeness crab are as simple as boiling it and cleaning it. Then it is the fun part: serving it and enjoying it. Dungeness crab is classically served whole, either hot or cold, and paired with melted butter or dipping sauces. It has flaky white meat and a bright orange shell. Boiling is a common method of cooking crab and takes about 15-18 minutes, depending on size of crab. Once cooked, you will need to clean your crab. AMSI has a wonderful pictorial guide to cleaning whole cooked crab. Once cooked and cleaned, you can remove the meat of the crab for recipes such as crab cakes and bisques.
